“小满之日苦菜秀”之说。营养专家说,苦菜含有蛋白质、脂肪、碳水化合物以及多种无机盐、维生素等营养成分,可清热、凉血、解毒,对疖肿、吐血、鼻出血、便秘、感冒等都有很好的防治作用。

大火将水烧开,转小火,加入姜片,倒2勺黄酒,小火慢煲。

水饺皮、肉糜、虾皮、鸡蛋、苦菜、青菜、玉米粒、胡萝卜、香菇、黑木耳

苦菜含有蛋白质、脂肪、碳水化合物以及多种无机盐、维生素等营养成分,可清热、解毒、对鼻出血、便秘、感冒等都有很好的防治作用;杀菌消炎,对黄疸型肝炎、咽喉炎、感冒发热及慢性支气管炎、扁桃体炎等均有一定疗效;还能防治糖尿病、直肠癌等。
Bitter cabbage contains protein, fat, carbohydrates and a variety of inorganic salts, vitamins and other nutrients. It can reduce internal body heat, and help in the prevention and treatment of nosebleeds, constipation, cold, jaundice, hepatitis, pharyngitis, chronic bronchitis, tonsillitis and others. It can also prevent diabetes, rectum cancer, etc.
和面。在和面的时候先把新鲜过滤出来的菠菜汁、蒸熟后的紫薯泥、南瓜泥分别放入3份面粉,并加入适量水,边加边搅拌,将面粉搅拌成絮状,和成光滑的面团,盖上醒发。
Mix the dough. Put fresh filtered spinach juice, steamed purple potato puree and pumpkin puree into 3 parts of flour respectively, and add appropriate amount of water, stir while adding. Stir the flour until well-mixed and form into a smooth dough. Cover the dough.

准备馅料。先分别将苦菜和青菜焯水、再和洗净玉米粒、胡萝卜、香菇、黑木耳洗净、搅碎、并挤干备用。然后炒鸡蛋,并将猪肉搅碎,在猪肉馅内加入虾皮、鸡蛋、苦菜、青菜、玉米粒、胡萝卜、香菇、黑木耳。最后向猪肉馅中加入料酒、生抽、芝麻油、盐、葱末,用筷子向同一方向搅拌,使猪肉馅上劲腌制备用。

擀皮。将醒发好的面团切成四份,取出一份面团,在砧板上揉成长条,分成两份,分别将两条面团搓成细长条,然后根据幼儿需要量再切成小剂,撒上面粉,防止粘到一起。取一小剂子,幹成厚度适中的皮。

包饺子。取一个水饺皮,放入适量的饺子馅,饺子皮一面先折三个褶子,该面的另一头再同样方法折三个褶子,左右对称,将两面捏合即可。
Make dumplings. Take a dumpling wrap, put the right amount of dumpling filling in it, and wrap by sealing the edges.

煮饺子。开火,水开后,放一小勺盐,这样饺子不会粘到一起。下饺子,用勺背朝锅底搅,防止饺子粘到一起。开盖开两滚,再开盖开一滚,饺子就好了。装盘即可。
